Whole Wheat Protein Bread Recipe

So we met a guy named Joe Niezgoda a couple weekends ago who's a fitness coach in Williamsville, NY. He Has a website called niezgodafitnesssystems.com and specializes in areas such as weight loss, functional fitness, endurance sports, nutrition and holistics. He's got a lot of good information to offer! One thing I thought would be really cool to pull on to our site (since we've been on the nutrition topic lately), is one of his recipes for a whole wheat protein bread. It sounds really good and would be a great addition to your daily protein intake! Give it a try! Let us know how it turns out!

Here is what you’ll need:

* 2 packages dry yeast * 1 1/2 cup filtered water * 3 Tablespoons sugar * 1 teaspoon brown sugar * 1 cup skim milk * 2 tablespoons Smart Balance * 1 tablespoon salt * 2/3 cup Pure Whey Protein Isolate powder * 1/3 cup soy flour * 3 tablespoons wheat germ * 3 cups whole wheat flour * 3 cups white flour * 1 egg beaten * ground flax seeds

How to make it:

1) Pre-heat oven to 375˚F

2) Put dry yeast in warm water to activate. (follow the directions on the yeast package)

3) In a saucepan warm: 1 cup water, 1 cup milk, 3 tablespoons sugar, 2 tablespoons Smart Balance, and 1 tablespoon salt. 4)Pour into a large mixer bowl. Add: yeast mixture, 2/3 cup Pure Whey Protein Isolate powder, 1/3 cup soy flour, 3 tablespoons wheat germ, 1 1/2 cup whole wheat flour, and 1 cup white flour. 5)Beat at medium speed 3 minutes. By hand stir in: 1 1/2 cups whole wheat flour, and 1 cup white flour. 6)Turn out onto floured board and knead for 10 minutes. If needed add: 1 additional cup white flour. Let rise until doubled. 7)Punch down and knead briefly. Let rest 10 minutes. 8)Place dough in two 9x5" greased loaf pans. Let rise until almost doubled. 9) Brush with beaten egg and sprinkle with ground flax seed meal 10) Bake at 375˚F for around 35 min.

    Step 3 seems to be missing (1, 2, … 4)? I’m guessing it has something to do with activating the yeast before mixing with dry ingredients. Unless this bread is supposed to be super dense and flat :)

    Are you sure then step #2 isn’t missing yeast? I’m pretty sure you need to put dry yeast in warm water before using it, and I don’t see it in there. Just trying to make sure there aren’t any disappointed folks wondering why their bread won’t rise!
